Produced by Marco Fantinel at his estate in Tauriano. Bright, lively, fresh and perfect for Holiday celebrations. The Prosecco grape produces a creamy-textured sparkling wine that perfectly complements our Bistro Crab Cakes.
Aglianico, Teodosio and Beef Short Ribs with Mushroom Risotto
The Teodosio vineyards are located in Barile, in the Italian region of Basilicata – on the side of a volcano: Mount Vulture. The vinification and storage (including one year in small oak casks) occurs inside 8 caves that were created in the 15th Century. This bottling is a pristine single-vineyard example of the ancient Aglianico grape, whose erratic and complicated history dates back to 79 a.d. The wine displays aromas of dried fruit, followed by rich, fiery flavors of field spices, cherry and plum. An excellent match with our beef short ribs.
William Kavney “Foursome” White - Ginger Glazed Salmon
This Napa Valley white blend is equal parts of four great white varietals, Chardonnay, Chenin Blanc, Sauvignon Blanc, and Viognier. The creamy, tropical richness of the wine, pairs excellently with our new Ginger Glazed Salmon dinner. Accented with a sweet ginger sauce, and paired with jasmine rice and sugar snap peas, this dinner and a glass of Foursome is perfect for a warm summer day.
Roth Heritage Red - Beef Short Ribs with Mushroom Risotto
This wine is a tribute to the Heritage of our forefathers, and is a blend of some of our most wanted red varietals throughout Sonoma County. The mostly Zinfandel, Malbec, and Merlot blend features bold, smoky aromas and rich deep fruits. The finishing notes of coffee, cherry and vanilla bean, complement seamlessly with our tender braised beef short ribs, which are braised with a coffee rub, and slow roasted in the oven.
